How deep is this pan? (NOT including handles)
Answer: Diameter 16-1 / 4 inches, depth 2-1 / 2 inches

Will it fit in a conventional oven?
Answer: Yes. It is 16-1 / 4 inches in diameter, 2-1 / 2 inches deep.

The maximum temperature in the oven?
Answer: This oven is safe to 500 degrees.

What is the capacity of the pan? How many quarts?
Answer: Honestly, this type of pan is not measured in this way, therefore we do not know. It is 16-1 / 4 inches in diameter, 2-1 / 2 inches deep, so it can hold 2-3 liters.

What are pens made of? Are they safe in the oven?
Answer: Stainless, and the oven is safe. Not great on an induction hob, though, but it works.

I would like to buy this paella pan, but I need to know if there is a lid that I can buy to make it fit this pan?
Answer: No. Not from All Clad, but possibly from other brands.

Can this be used on an open fire (fire pit)?
Answer: Yes, we used it on our big green egg. Simply cover the outside with dishwashing soap so that it does not turn black and cleaning will be easy.

Will an 18-inch pan fit in a home oven? Handles are not included in this measurement.
Answer: The pan will fit in the oven, but I would not recommend this with handles. I use mine on the largest burner for my stove or in a fire pit.

What is the actual diameter of the rim for dishes (not including handles)?
Answer: The diameter of the top edge of the rim of an 18-inch paella pan is 18.25 inches.

Can I use an electric stove on it?
Answer: Yes, this type of pan can be used on an electric stove, but the size is 22 inches, usually larger than most standard

What is the size of the middle pan?
Answer: I would say that 18 inches is an average panorama. The 20-inch is large and not suitable for a conventional burner.

Is polished steel and carbon steel the same thing?
Answer: Hi, this pan will rust and should be oiled. Most likely it is polished carbon steel. Stainless steel does not rust, but is not a traditional pan material.

Will a 22-inch work with a 22.5-inch Weber grill or will I need to upgrade to a 26.5-inch kettle to fit this thing?
Answer: If you leave your existing grill on the weber, it should work … just to close the gaps.

  • I bought an 18-inch pan. Used this pan for the first time and was not disappointed. Used an online seafood paella recipe from Rick Bayless’s site (Mexico one plate at a time). The pan perfectly completed all the steps necessary for browning, steaming, etc. The pan does not come with a lid, and my use of the pan used a home-made lid, which I fashioned. For seafood steaming was required, and I was not sure that this is possible without a lid. We found the pan was stiff, even when it was overloaded with food, and it did not bother her that she curled, deflected, and spilled onto the contents.

The pan is an untreated carbon steel pan, so a little rust, as described in the description, does occur if you do not wash it immediately. I can see where this might bother some who would like to choose a stainless steel pan with significantly more money. However, rust is easily cleaned as described in the information. I warmed up and lightly oiled my pan after washing, as if it were made for cast iron.

I would recommend this pan. It works many times better than the price suggests, especially considering that the cover from another supplier was actually more expensive.

  • I was very disappointed that the pan came without care instructions. I looked on the Internet and found instructions that are slightly different from one to the other, so I hope that I did everything right. It would be very helpful if this company included instructions for carbon steel pots in their packaging. We made a paella, and since I have not bought a stove yet, I put it on our gas grill. Since the pan is a couple of inches larger than our grates, I had to turn it around, but everything turned out to be very tasty. I’m going to buy a stove now, but I won’t buy next day delivery from Amazon! They returned an additional fee, but the goods did not arrive as expected.

  • According to the product descriptions, I used hot water and soap to clean the manufacturers sending a thin plastic coating from the pan.
This pan is great for large portions of paella, but we use it much more. We fry steaks, cutlets, vegetables, etc. on the stove, then put them in a hot oven to finish cooking. And it fits very well with our green egg, works great on the grill, cooks evenly.
Easy to clean thanks to non-stick coating, durable and well-made bottom. I really love this paella pan! We are very pleased with this purchase and highly recommend it.

  • I really like this paella pan. It weighs 5 pounds, which is pretty good. I have a burner on my stove that can produce 19,000 BTUs per hour – so I can cook almost anything at high temperatures, if I want. This pan cooks fairly evenly at high temperatures, but I still need to move the pan around the burner to cook evenly at high temperature. I also have a 7 pound copper Mauviel oval pan that cooks more evenly than an All-Clad pan at high temperature. I don’t knock on the All-Clad pan, but simply note that if you like to cook large dishes at high temperatures, the All-Clad pan may not be the best option you can get. Even if it said, it is a big pan for money in my opinion.
